Quick & Easy Banana Muffin  

Enjoy this delicious low-calorie snack for those busy days. Chocolate lover? Mix in ½ cup mini chocolate chips at the end of step 3. Recipe adapted from “Little Sunny Kitchen”.

•        1 1/4 cups all purpose flour

•        1/3 cup vanilla protein powder (I used Believe Brand)

•        1 tsp each baking soda and powder

•        ½ tsp ground cinnamon

•        ½ cup granulated sugar

•        1 large egg

•        3 ripe bananas

•        ¼ cup melted salted butter or margarine

•        1 tsp vanilla extract

1. Preheat Oven to 350F and coat muffin tin with non-stick spray (or use muffin liners).   

2. In medium bowl, combine dry ingredients (excluding sugar) and set aside. In a large bowl, whisk together the sugar, egg, bananas, butter, and vanilla. Add in the dry ingredients and stir until just combined (avoid over mixing).

4. Divide between 12 muffin cups, bake 22 – 25 minutes or until edges are golden and tops spring back to touch. Cool on a wire rack.
