5 Ingredient Avocado Chicken Salad Sandwich
This is a great way to use up leftover rotisserie chicken. Try my nutrition hack of keeping frozen avocado chunks on hand, you’ll never have to worry about the tricky timing of avocado ripeness.
• 250 grams of shredded chicken breast
• 150g avocado (mashed)
• ½ lime, juice
• ¼ cup fresh cilantro (chopped)
• ¼ cup red onion (minced)
• Salt & pepper to taste (optional)
1. In a medium bowl, use a fork to mash ingredients together. Spread between two slices of multigrain bread.
